Etymology: Inherited from Proto-Turkic *bögürek, a diminutive of *bögür (“kidney”), whence بوگور (böğür, “side, flank”), based on the similar shape of the pastry to the organs. Alternatively from Middle Iranian *pūrag, a type of filled pastry, such as شکربوره (šakarpura, a sweet dough filled with almonds and pistachios) and thus cognate with Sanskrit पूरिका (pūrikā). Probably unrelated to Slavic pierogi.
